This Middle Eastern egg dish is a 30-minute miracle. Sauté onion, garlic, and bell pepper. Add a can of crushed tomatoes, cumin, paprika, and chili flakes. Simmer 10 minutes, then crack 4–6 eggs directly into the sauce. Cover and cook until whites are set but yolks are still slightly runny. Serve with crusty bread or pita.


6. Pesto Gnocchi with Spinach and Tomatoes — 15 Minutes

Store-bought gnocchi cooks in 2 minutes. Toss with jarred pesto, a handful of spinach (it wilts immediately in the heat), and cherry tomatoes. Finish with grated Parmesan and a crack of black pepper. This is the fastest dinner on the list.


7. Beef and Broccoli Stir-Fry — 25 Minutes

Slice beef sirloin thin (easier when slightly frozen), toss with cornstarch and soy sauce, and flash-fry in a very hot pan for 2 minutes per side. Steam broccoli separately or add it to the pan with a splash of water. Make the sauce: soy sauce, oyster sauce, sesame oil, and a pinch of sugar. Serve over rice.


8. Creamy Tuscan White Bean Soup — 30 Minutes

Sauté onion and garlic, add two cans of white beans (cannellini work best), chicken or vegetable broth, and a can of diced tomatoes. Simmer 15 minutes, add a large handful of fresh spinach, and stir in 2–3 tablespoons of cream. Finish with Italian seasoning and a squeeze of lemon.
